Header configuration

I’m trying to understand several aspects of the vineyard theme. I’m really looking to take advantage of the Header1 because the graphic I want to use is rather large and the editor doesn’t appear to allow me to adjust the placement of the graphic in relation to the header with the other header options. However by selecting Header1, it places my menu in the graphic, which I don’t want. I want the menu to appear directly below or above the menu. Is that possible.

Secondly I don’t want the page name to appear within the header. It completely takes away from the picture.

Third, how can I enable the sidebars within the site? In order to place widgets?

Lastly within a given page, it doesn’t appear that I have control to determine page layout. It only displays a full width page as opposed to setting a percentage either to the left or right to incorporate the sidebars.

Any help would be appreciated.
